What’s a sope? (soh-pay)

Its like a really really thick corn tortilla, used as a base for delicious dishes. Crisp it up in a little butter, bacon fat, or coconut oil (really whatever fat you choose is fine, but get that crisp!) and top with a fried egg, carne asada, cochinita pibil, or just eat it all by its lonesome!

Add in some locally grown Jamaican Scotch Bonnets, garlic, and Queso Panela Mexican cheese for a little slice of heaven.
