What is a huarache? It’s the traditional woven leather shoe that is ubiquitous in Mexico and Latin America. It is also a tasty savory corn cake of a similar shape. Think “sope” but oblong, and a touch thinner.

I am using heirloom masa harina from Mexico, Hatch green chiles, Tillamook extra sharp cheddar, garlic, and a few other spices to flavor this delight. Its more masa than I use for Sopes, so it’s the same price, but 4 in a pack. Top it with frijoles and eggs for a delightful desayuna.
