Don Quixote was the Man from La Mancha. He hopped upon his noble steed (Rocinante, and old skinny horse) to save his countrymen from the giants invading the land (they were actually windmills) alongside his brave squire Sancho Panza and his donkey, Dapple.
It is quite the tale of putting full effort into a task that doesn’t really need to be done. I think there is a lesson in there somewhere.
So anyhow, I am using Extra Virgin Olive Oil from Spain, Manchego Cheese, which is actually from La Mancha, Spain, and Spanish style chorizo, all in a thick, tasty flour tortilla. Are you in?
