The star of this show is the bacon fat rendered from Cave Creek Meat Market’s delicous Bacon Jam, made with a little brown sugar and spices. The flavor carries over to a mild aromatic sweetness in the fat, and it makes the tortilla AMAZING.
A nice pepper medley from Farmer Bill in Sunflower rounds out the flavor. Roasted Banana peppers, Jalapeños, Red Embers, and Hungarian Hot Wax peppers. Que WOW. There is a hint of Ghost Pepper to give it a slight bite, but it is ever so slight. Maybe a 3.5/10 on the heat scale.
